There are very few things in life more evocative than the smell of freshly brewed coffee.
I have loved this smell even before I could actually taste it. As a child, I remember my grandad drinking strong black coffee on a Saturday morning while playing backgammon with his mates. When I roast and brew my coffee today it still takes me back to those moments.
At Mont58 we hand-roast each batch of beans and experiment a lot with different roast profiles, to try and get the best out of each type of bean.
Not all beans are the same. Some need to breathe for a day after roasting. Others sit for three days before we bag them up and send them out. With each new batch of beans, we test roast and taste and test again (lucky us). If we don’t love it, we won’t sell it.
